Red Kidney Bean burgers
INGREDIENTS
* 1 (19 ounce) can red kidney beans, drained
* 1 small onion, chopped
* 1 tsp (or to taste) chili powder
* 10 saltine crackers, crushed
* 2 egg, beaten
* 1/4 teaspoon garlic powder
* salt and pepper to taste
* 1/4 cup vegetable oil
DIRECTIONS
1. In a medium bowl, mash red kidney beans. Mix in onion, chili powder, crushed crackers, egg, garlic powder, salt, and pepper. Divide into 6 equal parts, and shape into patties.
2. Heat oil in a large skillet over medium-high heat; use more or less oil to reach 1/4 inch in depth. Fry patties until golden, about 5 minutes on each side.
although i didn't use nearly so much oil, this turned out incredibly good! so good in fact i am going to make more on monday and freeze them. they will make good lunches for the boys. so good! OM NOM NOM NOM
Ginger Snaps
2 cups of flour
1 tblspn of ginger
2 tsp of baking soda
1 tsp of cinnamon
1/2 tsp of salt
3/4 cup of shortning
1 cup of brown sugar
1 egg
1/4 cup of molasses
granulated sugar (like demerara sugar)
Cream shortening and brown sugar. beat in egg and molasses. Sift in dry ingrediants. blend well. form into small balls and roll in sugar. back 2 inches apart in 350 F oven for 12-15 minutes. Cool ona rack or on paper towel. cookies will flatten during backing and look cracked on top.
so freaking delicious are these cookies.
