ya know. went through old LJ posts. found one from 2007 on a friends page. literally a few days before she went into the hospital and never came out. She was something a lil spitfire.

She would have been proud of what i did. i named one of my kids after her. my oldest. her middle name is my friends first name. and my oldest reminds me so much of her as well. it was a hit in the feels. and a good reminder to keep looking after myself health wise.

keep the diabetes in control. get the pain in my side looked after. (ultrasound, 1.5 hrs long,and found nothing) so now have to contact the DR again for a CT scan.

and these health reminders keep coming. around this time of year, 7 years ago. my sugar levels were SKY HIGH at over 17. and 7 is the normal (for canadian numbers)

now, 6-8 are my norm.

all the feels right now.

ahhhhh so the saga of microsoft scammers is continuing. now they are trying to get your clsid number so they can get you to check your errors. and install something so they can access your computer install something, then you have to pay them to remove it. yeah, i lost it once they told me to check my "events"

yup. they upped it one more time.

don't give into these microsoft scammers, ask for ID ask for proof if possible. and most of all. do not DO NOT download AMMY or anything else that they can use to access your computer and install other issues.

ahhhhh i got to let off some anger this morning. yes i like yelling at them. they like calling, i like yelling.

and it appears to be a issue a TON of women have. all over the world.

while i am all for celebrating our love for one another, i dislike valentines day. the commercialized crap out there.

i am going to write today about something a friend once told me.

When you have children, give up on your dreams.

which i think is incredibly false. my children are a part of me yes, but my dreams will NEVER be given up upon JUST because i had children.

i dream of being a photographer. i want to try all sorts of stuff i never tried before. glamour, boudoir, fashion, runway, newborns, family, sporting events and so forth.

I've done a wedding. never doing that again. i give huge props to people who can do it. i would be a second photographer for one, but never a primary again. way too stressful.

i did do kids and families in studio while at the big box company, but want to learn more natural lighting, and setups with as little flash photography as possible.

i also want to try doing macro and landscape. i don';t think i got the eye for tiny photography or for landscape. i do know someone who shoots ants. his stuff is amazing and he should put together a collection of it for a gallery or something. i just can't look at it. i'm too squeamish about it.

so my kids can be part of my dream. If Anne Geddes can start from her incredibly humble beginnings, i can too. She is one of my photography heroes. and i really should go purchase her big coffee table book when i can. so amazing listening to where she started from.


i know i can get caught up in the little details. i would like a studio setup. i would love to have my living room be more versatile where i could move everything out or around and use it as a studio. i got a lot of natural light from one side, and enough room i could set up lights in there as well. one day. that is a $2000 dollar dream though~


so never give up your dreams. they might be put off for a little while. but never ever given up upon.

just posting recipes for making my own recipes.

Goal for Monday.. make these crackers.

Crackers
(make these into animal crackers!)
Ingredients
1 cup flour (can mix different flours)
1/2 tsp salt
Other additions
like herbs or seeds
2 tbsp. butter or neutral oil
Instructions
Mix the ingredients together.

Then, add in 1/4 cup water and mix until it holds together but isn't sticky. Add more water as needed.

Then roll it out, score, and bake in a 400 degree oven for 10 minutes or until browned.

Then...enjoy!

Soda Crackers

You need:

1 teaspoon dry yeast
1 cup warm water
About 3 1/2 cups flour
3 tablespoons vegetable shortening
1 1/2 teaspoons salt
1/2 teaspoon baking soda, dissolved in 1 tablespoon warm water
2 tablespoons buttermilk
4 teaspoons coarse salt

Stir the yeast into the warm water and let stand to dissolve for 5 minutes. Add 2 1/2 cups of the flour to the mixture and beat well. Cover the bowl with plastic wrap and let rest for 24 hours in a warm spot.

Add the shortening, salt, baking soda and buttermilk. Mix the dough well, turn onto a lightly floured board and knead for 1 minute. Let the dough rest for 10 minutes. Resume kneading until the dough is smooth and elastic. Put the dough in a bowl and cover with plastic wrap. Let rest for 3 to 4 hours.

Place the dough on a lightly floured board and roll it into a thin rectangle, about 1/8-inch thick. The elasticity in the dough will work against you, but roll the dough out, using your weight firmly, pushing on the rolling pin; also use your hands to stretch it out.

Preheat oven to 500 degrees. Use ungreased cookie sheets. Dust the dough lightly with flour and then fold into thirds like a business letter. Turn the dough so a narrow end faces you and roll again, lightly dust with flour, fold again into thirds. Do this three times in all.

Divide the dough in half. Roll one half into a rectangle 1/8-inch thick or as thin as you can manage. Trim the edges so you have a neat rectangle. Lightly sprinkle salt evenly over the dough. Cut the dough into squares 1 1/2 by 2 inches. Prick each square with the tines of a fork several times.

Place the crackers on a cookie sheet, close but not touching. Bake for 7 minutes, turn over and bake for another 3 or 4 minutes. Cool your homemade crackers on wire racks.

ugh...

lets talk about salt shall we?

i find myself craving it again. yup. craving salt. means my sugars are off again dammit. i crave salt every time my sugars go up.

so.. now to cut the extra salt and sugar out of my diet again. this is goign to be tough. no really. it will. spicing things up means using a bit of salt to heighten the flavours of things. and damn montreal streak spice has so much salt.

so.. i am going to try and post everything i eat into a journal. hold myself accountable for it. starting in feb. as part of my lesscushion challange for myself for the month. and 750 minutes of exercise. no excuse. my body has been feeling a little better. just have to get going on it and take this change of life style more seriously.

i celebrate Christmas in the we spent it with family sorta way. we switch between 3 houses over the years, either my MIL, my FIL or my mom's place. we did it once at our house, but not since the girls were born.

would love to have family over to our place, we are just not big enough to host FIL and his fiance, MIL, AND my mom and dad. and my kids. and my sisters and their kids. maybe one day we can look forward to a huge christmas like that.

i love celebrating with family.
