Spaghetti Aglio e Olio

Spaghetti Aglio e Olio
200 grams dried long pasta
1/4 cup olive oil
1 medium garlic cloves
1 tsp. salt
Freshly ground black pepper
Red pepper flakes (optional)
1 or 2 Tblsp. minced fresh herbs such as parsley, fresh oregano or a mixture (optional)
Freshly grated Parmesan (pass separately)
Save 1/2 cup pasta water.
Cook pasta in pot of salted water. cook for however long it takes to cook pasta.
in a pan, put in olive oil and minced/slivered garlic. cook till garlic is golden. Add chili flakes here. i didn't add any. You can take it out or leave the garlic in. your choice. i leave it in! Set aside till pasta is done.
Once pasta is done, put oil back on burner, add pepper, fresh herbs, and spaghetti. stir until spaghetti is coated in oil! is spaghetti looks too dry. ad spaghetti water in little amounts till done to taste. Take off and serve.
Experiment with recipe. it's freaking delicious!
